i have already shared the gravy version of paneer tikka and i wanted to share the dry version in more economical way i.e on tawa. certainly it cannot match the moist result of paneer tikka cooked in a clay oven or tandoor. but this recipe is for those who want to fulfil the crave for tikka’s in most economical way in their own kitchen. being a huge fan of paneer recipes and tikka recipes, i prepare this way quite frequently. i even tried preparing the dry paneer tikka in normal baking oven. however i always fall back to my tawa because of smoky flavour it has to offer.

For Marinade
- 400 grams Paneer sliced into cubes
- 1/4 tsp Red Chilli Powder
- 1/4 tsp Black Pepper Powder
- 1/8 tsp Turmeric Powder
- 1/4 tsp Salt
For Onion Masala
- 2 medium sized Onion chopped
- 6-7 Garlic Cloves
- 1/2 inch Ginger
- 3 Dry Kashmiri Red Chillies 10 minutes soaked in hot water
For Curry
- 3 tbsp Pure Ghee
- 1 tbsp Oil
- 2 Green Cardamoms
- 1 Black Cardamom
- 3 Cloves
- 1 inch Cinnamon
- 1 Bay Leaf
- 1/2 tsp Cumin Seeds
- 2 Dry Red Chillies
- 1 Onion finely chopped
- 1/4 tsp Turmeric Powder
- 1/2 tsp Kashmiri Red Chilli Powder
- 1 tsp Coriander Powder
- 1/2 tsp Cumin Powder
- Puree of 2 medium tomatoes
- 2 tbsp Kasoori Methi
- 3/4 tsp Salt
- 1/4 tsp Sugar
- 2 tbsp Fresh Cream
- 1 cup Water
- 1/2 tsp Garam Masala Powder
- 2-3 Green Chillies
- 2 tbsp Coriander Leaves finely chopped
Instructions
For Marinade
- Add Red Chilli Powder, Black Pepper Powder, Turmeric Powder and salt into the Paneer cubes and mix them well. Marinade it for 10 minutes.
For Onion Masala
- Blend the Onions, Garlic Cloves, Ginger, Kashmiri Red Chillies in a mixer until smooth. Keep it aside for now.
For Curry
- Stir fry the marinated Paneer with 1 tbsp Ghee until they're light golden.
- Pour the oil and rest of the ghee into a kadai. Add the Green Cardamoms, Black Cardamom, Cloves, Cinnamon, Bay Leaf, Cumin seeds, Red Chilies, Onions and fry them until soft and translucent. Keep it on low flame.
- Furthermore, add Turmeric Powder and Kashmiri Red Chili Powder. Mix them well.
- Now add the ground Onion masala. Stir continuously until oil release.
- Add Coriander powder, Cumin powder, a little amount of water and mix them well. Then add the tomato puree, Kasoori Methi, Salt, Sugar and mix them well. Cover & cook for about 3-4 minutes on low flame.
- Next add the fresh cream and mix well. Pour a cup of water and add the fried the paneer cubes into the mixture. Mix them well.
- Add Garam Masala Powder, Green Chilies, Coriander leaves and mix well.
- Paneer Masala is now ready.
2. further add in ½ tsp turmeric, 1 tsp chilli powder, ½ tsp coriander powder, ¼ tsp cumin powder, ½ tsp garam masala, ½ tsp kasuri methi, ½ tsp chaat masala, 1 tsp ginger – garlic paste and ¼ tsp ajwain.
3. furthermore add 2 tsp of roasted besan, 1 tbsp lemon juice and salt.
4. mix till all the spices are combined well with curd.

5. now add ½ onion petals, ½ cubed capsicum (red & green) and 5 cubes paneer.
6. also add 1 tsp of oil.
7. mix gently to coat vegetables well.
8. furthermore, to marinate, cover and refrigerate for 30 minutes.
9. after marination, insert the marinated paneer, capsicum and onions into wooden skewers.
10. further, roast it on a hot tawa or grill in oven or tandoor.
11. also spread a tsp of oil over the tikka.
12. roast on medium flame and keep rotating in between.
13. roast all sides, making sure it doesn’t burnt.
14. finally, sprinkle some chaat masala and serve paneer tikka immediately.
notes:
- firstly, make sure to marinate at-least 30 minutes or extend till overnight, for perfect restaurant style tikka taste.
- also, adding a drop of red food colour, gives bright red
- additionally, add vegetables of your choice like broccoli, baby corn, mushroom or potato.
- finally, serve panner tikka immediately, else it doesn’t taste great.
